banana bread is a special cake with a nice scent of ripe bananas, very tasty, especially in the morning with a glass of milk or a cup of coffee.
there are many recipes for banana bread, i chose a whole wheat-based version (it is very healthy, high in fiber and b vitamins), ground nuts and brown sugar. brown sugar gives the special flavor and color of the baked banana bread. you can then add chocolate chips to make it truly divine.
ingredients:
-250 gr whole wheat flour (white flour is ok,if you prefer)
-150 gr butter
-2 large eggs
-3 big, ripe bananas (it's ripe when you can smell a strong perfume of bananas and their consistency is soft)
-a cup of brown sugar (aprox.250 gr)
-a pinch of salt
-a teaspoon of bicarbonate (or half a sachet of baking powder)
-150 grams grounded walnuts (if you put chocolate chips use the same quantity)
- 3 sachets vanilla sugar for glaze (optional)
bring butter to room temperature and put in a robot. whisk butter with sugar until the sugar is nicely melted. then, add the eggs , one at the time, mixing well .in the end, add all dry ingredients: flour mixed with baking powder and salt.
peel and mash the bananas.
incorporate the mashed bananas in composition. add the ground nuts, stirring gently with a spoon until batter is smooth.
if you want to put chocolate chips, it's time to add them, too.
pour into a baking tray lined with parchment paper (or greased with butter and dusted with flour or use silicone form, like mine, that no longer needs any protection).
if you want to make a glaze of sugar, sprinkle 3 bags of vanilla sugar over the composition.
bake at 180 degrees for about an hour, until it's nicely browned and passes the toothpick test (you insert a toothpick in the bread and it should come out dry).
remove from oven, wait a few minutes to cool and the banana brea out of shape. allow to cool completely on a wire .
serve at room temperature with a cup of milk.
