one of the healthiest vegetables is beetroot. it’s good for anemia,it’s invigorating and mineralizing. red beet is consumed both raw (juice), and baked or boiled, without losing its properties.
i saw this red beet salad with orange recipe at the show of famous mark bittman and i decided that it’s worth trying. indeed very good combination between red beet’s sweet taste and the sweet sour flavor of oranges and the fried garlic and the slightly spicy pumpkin seeds. this is something special.
a special recipe that will bring you good mood and lust for life!
ingredients:
-2 baked beetroot and then peeled
-3 tablespoons pumpkin seeds
-3 carlic cloves
-an orange
-olive oil
-apple-vinegar
fry garlic at very low heat. when brown slightly, turn it over.
add pumpkin seeds and leave them into the pan for 1 minute. finally, both garlic and seeds should be slightly brown.
stir mixture.
add some salt, a tablespoon of vinegar, some orange cubes and mix again.
if it’s too thick, add more fresh orange juice.
cut beetroot into cubes. pour orange sauce, garlic and toasted pumpkin seeds over beetroot.
stir.
serve immediately.
you can add orange cut into cubes for a refreshing taste.
