i decided to pamper you! so i have prepared a delicious, sweet and refreshing mix of mascarpone with exotic red oranges and raspberry topping. obviously i did not forget to take care of your silhouette so my surprise is that this cake has no flour or sugar. you will enjoy this desert without having the slightest remorse because it’s incredibly dietetic!
the recipe is simple, easy to prepare because i wanted to keep the fruit taste and fragrance as natural as possible.
i leave the result to your appreciation. but i assure you that it’s worth trying!
ingredients:
dough:
-6 eggs
-200 grams almond flour (finely ground almonds)
-2 tablespoons fructose
-juice of half a lemon
-2 teaspoons lemon zest
-1 to 2 drops almond essence
-half a sachet of baking powder
-lemon juice
cream:
-250 grams of mascarpone (version "light" is preferable if you are on a diet)
-juice form an orange or two (depending on how big and juicy)
-2 - 3 tablespoons fructose
-a teaspoon of orange peel
first prepare dough. separate egg whites from yolks. whisk egg whites stiff, add a little lemon juice and a pinch of salt. the secret for obtaining a very hard egg foam is for the eggs to be very fresh and cold. lemon juice and salt help them to become glossy-white and "stay" as long as possible.
add the juice of half a lemon over the baking powder.
mix egg yolks with fructose, flour, almonds and orange peel.
mix well and then add the juice of half a red orange (if you have red oranges, if not add the juice of a normal orange).
add egg whites in yolks composition and stir gradualy using a spatula or a spoon, with large movements, from top to bottom, so that the egg foam remains stiff.
please grease and spread almond flour on the tart tray.
pour composition in tart tray and place it in oven at 180 degrees for 20-30 minutes until dough is golden brown and firm.
meanwhile prepare the cream. mix all ingredients with a spatula.
add orange juice.
taste and add the right amount of fructose.
you will obtain a wonderful mascarpone pink cream, very flavoured and tasty. place cream in refrigerator until dough is ready.
remove dough from oven when ready. leave it to cool at room temperature.
spread 200 grams of dietary berries jam (no sugar) over dough while still hot.
allow dough to cool completely before covering with cream.
cover dough with thick cream, then decorate with fresh raspberries.
leave in the fridge at least an hour before serving it.
it is delicious and very good looking. it is an ideal dessert for a romantic dinner.
after being left in the refrigerator for at least 12 hours the flavors become more intense. so i recommend you serve it the next day with morning coffee.
