The American Cherry Pie is the most popular American pie, therefore, it's a good idea to take advantage of the cherry season to try a delicious American cherry pie. One slice of cherry pie, served with vanilla ice cream will delight you any time of the day.
- two big cups of flour
- 150gr butter
- one box of cheese
- 4 spoons of sugar
- cold water from the fridge (about a cup)
- one dish of cleaned, seedless cherries
- 2-3 spoons of sugar
- aromas (vanilla, almonds)
- 2-3 spoons of starch (if the cherries are too juicy, if not, you can use less or not at all)
Put the flour, salt powder and 4 spoons of sugar in the mixer. Gradually add the cold butter, cut in cubes.
Mix rapidly until you get a very "sandy" consistency.
Add the cheese cream and continue to mix.
Gradually add water until you get a dough.
Transfer the dough in a bowl and, if it's too sticky, add some more flour, until you get a soft dough which has more consistency.
Place the dough on e plastic foil, cover it and put it in the fridge for couple of hours or in the freezer for one hour, until it hardens.
When it's cooled enough and hardened, take it out and cut it into 2 unequal pieces.
Take the large piece and lay it on a pan with flour until you get a thickness of 1-1.5cm. Then, place it on a buttered, floured tray.
Prick the dough with a fork.
Mix the cherries with the sugar, the essences and the starch (optional) and place them over the dough.
The other piece of dough should be cut into slices that you can use to make a "grill" on top of the filling. Anoint the dough "grill" with milk.
Bake at 200 degrees for 20 minutes and then at 180 degrees until the dough is well done and then another 30 minutes (use the "toothpick" test - if you insert the toothpick in the dough and then you take it out, the toothpick must be dry).
When you take it out of the oven, you need to powder it with sugar.
Serve warm or cold.
It's delicious when you serve it warm and with vanilla ice-cream topping.
