The endives filled with spicy shrimps, avocado and pineapple are a festive appetizer, very attractive and very tasty. A platter full of nicely decorated endives will surely be the attraction of the party as they are very elegant and gracious.
The combination of spicy, hot shrimps and an avocado salad with fresh pineapple, sprinkled with lemon juice gives this appetizer a tropical feel making it even more attractive.
Even if you don't plan any party, you can taste these special endives during any weekend evening, whenever you want to have a light, healthy and quick dinner which will fully reward your appetite. A white wine, a cocktail or, why now, a glass of champagne are "recommended" next to these small wonders.
- 2-3 big, white, nice endives
- 1/4 of fresh pineapple
- one avocado
- one lemon
- one pack of peeled shrimps
- shrimps spices: hot pepper, ginger, coriander, Allspice, pepper, garlic, fresh thyme, lemon and orange juice, soy sauce and salt
Cut the pineapple in small cubes. Take out the avocado pulp, sprinkle it immediately with lemon juice and cut it into small cubes as well.
The shrimps can be prepared in advance and served chilled on the endives or can be a bit warm.
The shrimps (already cleaned) should be washed thoroughly. Dry them and marinate them in a little olive oil and a spoon of soy sauce. You can add in this sauce a little bit of all the condiments above, one minced hot pepper, 2 minced garlic cloves and 2 spoons of fresh thyme. Sprinkle some salt and the mix. Let the shrimps marinate for about 30 minutes, then fry them until they become pink-orange. Cooking the shrimps takes very little and it's good to turn them upside down and anoint them with the marinate sauce quite often.
Split the endives, wash them quickly with cold water and dry them. Do not leave the endives in the water for too long because they will turn bitter. Fill each leaf with the pineapple salad and avocado, sprinkle some lemon juice and place a shrimp on top.
