Green beans with mushrooms and peppers in wine sauce

wine sauces bring more taste to the food, even the vegetables based ones. today we propose a fasting recipe, full of greens and colorful and healthy vegetables, flavored with a little white wine.

start with stewing the onion (2 medium onions) in very little olive oil.


when the onion is slightly glassy, add a cup of warm water and let it boil.


add a pinch of salt.


when the water boiled down completely, add the green beans and another cup of hot water. sprinkle salt and pepper, to taste.


grind garlic and add it in the pot.


chop the peppers and add them after the beans have boiled for 10 minutes.


wash the mushrooms, peel and cut them into large pieces (or however you prefer).


add the mushrooms and cover with a lid.


mushrooms will leave a lot of sauce, so after 5 minutes, remove the lid and let it simmer over medium heat.


add the wine and continue cooking another 10-15 minutes.


add 3-4 tablespoons of tomato or pepper paste, to help thicken the sauce.


let it boil for 2-3 more minutes, over low heat.


finally, turn off the heat and add your favorite herbs (dill and parsley).


serve hot with fresh bread.


it smells very good and it's very tasty.
