"involtini" it’s an italian specialty. it is very attractive and easy to prepare. the meat is rolled and filled with a mix made of egg, bread crumbs, parmesan cheese and then fried. serve plain or with tomato sauce.
"involtini" is adapted from an original sicilian recipe. involtini sicilian recipe contains bread crumbs, parsley, garlic and parmesan cheese and rolls were fried or roasted on the grill. adapting the recipe requires baking in the oven (“involtini of forno") and replace the bread crumbs and parmesan cheese with ground almonds (to be more "light "). obviously you can respect the italian tradition and fry them but in the oven it will be lighter with a crispy crust.
my version brings a three sauces with a little french flavor (because i like to combine the two styles): a cheese sauce with cumin, a black currant sauce and red wine with chocolate sauce.
ingredients:
-3 chicken fillets
-a touch of parsley
-pepper
-salt
-ground almonds
-1-2 garlic cloves
-olive oil
for cheese sauce:
-a cup of liquid sour cream
-a few tablespoons of grated cheese
-a scoop of cumin
-pepper
-salt (optional)
-parsley
-2 tablespoons ground almonds
-a pinch of nutmeg
beat the chicken meat.
sprinkle chopped parsley, salt, ground pepper and garlic.
place fillets on a plate filled with ground almonds in the filling up. sprinkle a tablespoon of ground almonds over the other spices (or bread crumbs and parmesan cheese).
roll. notice how the outer crust is formed without any effort.
cover the pan with a baking sheet and after you rolled the meat very tight place the chicken roll in the pan (because we do not have fat at all is good to use the baking sheet. otherwise it may stick).
roast in oven at 180 degrees for 30 minutes, until brown (for the last 10 minutes you can use ventilation function).
meanwhile prepare the sauce. we will make a cheese sauce but you can make and a simple tomato sauce with olive oil and herbs.
heat liquid sour cream. add almonds (optional), salt and pepper.
add grated cheese. make sure the heat is medium to low.
add cumin and stir constantly to melt cheese.
add parsley when ready.
if you want it creamy you can use the blender.
remove involtini from oven when brown.
arrange the serving platter. sprinkle a little chopped parsley.
serve with sauces.
cheese sauce goes very well with the involtini.
same combination with black currant sauce. the red wine with chocolate sauce is a more extravagant taste.
