kafta (or "kofta") is the name of arabian skewers made of minced meat (lamb or beef), specific spices and finely chopped herbs. put on grill, the kafta skewers spread a pleasant and alluring smell and taste delicious.
serve with salad, yogurt-based sauces and pita.
ingredients:
-800 gr minced lamb (or beef or mixed)
-fresh herbs (mint, parsley)
-arabian spice mix for meat: paprika, cumin, coriander, nutmeg, cinnamon, black pepper
-salt
-1 small onion finely chopped (i put some green onions)
- garlic (optional)

mix all the above ingredients. it's recommended to put more than 2 tablespoons of spices (to gain stronger flavor).

let the meat stay for 30 minutes with spices, then form the skewers.

fry them on medium heat, rolling often.
