beef chops goes perfectly in this sweet-spicy mix with festive orange flavor. it's a special winter recipe, ideal for holiday meals, especially the new year's eve meal.
the sweet-spicy marinade, with hints of citrus, pepper and honey, tenders and offers the meat a nice scent. the beef remains soft and juicy on the inside and perfectly browned on the outside.
it is an interesting combination of flavors that deserves to greet the new year and to surprise your guests.
ingredients (for 2 persons):
-1 thick beef steak (600 grams)
-2 sweet and juicy oranges
-mashed tomatoes (thick tomato juice)
-pepper
-sweet paprika
-cayenne-pepper
-garlic
-soy sauce
-tabasco sauce
-balsamic vinegar
-oil
-honey
-pepper
we start by preparing the marinade. mix 3 tablespoons of tomato sauce with 1 tablespoon of soy sauce, 1 tablespoon of balsamic vinegar, a few drops of tabasco sauce, half a teaspoon of paprika, a pinch of cayenne pepper (it's very hot), half teaspoon of pepper.
squeeze an orange and add the juice to the marinade.
optionally, add pepper.
add 1 tablespoon of honey and 2 cloves of ground garlic. we do not salt yet.
smear with oil a heat-resistant tray and put the beef chops in it (washed and wiped out in advance) and pour marinade over.
cover with foil and leave it to marinate for 2 hours in the refrigerator. then remove the tray and leave it for about an hour at room temperature before placing in the oven.
it is important to put it in the oven when the meat is already at ambient temperature to avoid a heat shock (hardens the meat). sprinkle a little salt, before baking the steak.
cover the tray with aluminum foil and bake at 180 degrees for about 20 minutes. then remove the foil.
squeeze the other orange and mix the juice with a tablespoon of honey. brush the steak with orange juice mixed with honey. it will form a gorgeous browned crust.
reduce the heat to 160 degrees and continue baking until the meat is browned, after about 10 minutes. meanwhile, sprinkle the steaks with the remaining orange juice and the sauce in the tray.
meat must remain soft when pressured (that is a sign that it is tender and juicy). do not bake the beef for a very long time.
after you remove the tray from the oven, leave the steak rest for 5 minutes before you cut. remove the bone and slice.
serve slices of roast beef with the sauce from tray.
garnish with halves of slices of fresh orange.
