"ras el hanout" is a famous blend of spices, of african origin (morocco). the name means "the best from the store", ras el hanout is the most prestigious product of each seller of spices. the preparation recipe for "ras el hanout" is kept secret; no manufacturer ever writes on the label all the used ingredients. it is known that generally are used about 25 to 27 ingredients, but the most valuable mixtures use much more.

-coriander

and now the recipe:

wash well the chicken parts (i used drumsticks), boil them for 10 minutes, drain them and put them in a pan greased with olive oil. sprinkle salt over them. stir well the chicken parts to evenly distribute the salt and to be completely covered with oil.

sprinkle "ras el hanout" over the chicken. if you want it spicier, then sprinkle paprika and black pepper.

give the tray in the oven at 180 degrees for half an hour.

it's ready when they're nicely browned. the flavor is indescribable, you must try it!

serve with fresh mint and yogurt sauce and couscous garnish.

another option is to marinate the meat a few hours. the flavor will be even more intense. in this case do not boil the meat, just leave it smeared with oil and spices in the refrigerator, covered with foil, for a few hours. then, put in the oven for an hour.

enjoy!
