Purple-green salad

this recipe is especially for salad lovers. it is for those who want something special, for those who want an exotic, elegant, light and full of vitamins dinner. i propose "a little purple" recipe :). the combination will give you a great feeling of freshness, both as taste and also olfactory and visual (because i sprayed it with a fancy marinade).

serve it with whole baguette slices (ideal is the one with black olives, because of the flavor), to provide a more mediterranean flavor and nutritional intake; or with rice or noodles, if you want to give it a more exotic touch.

begin by selecting a very fresh salad with green-purple leaves. the darker the salad, the more natural antioxidants it has, so do not stay away from colorful specimens.

wash each leaf with cold water, and then leave them to drain.

wash the mungo bean sprouts (the long and white ones) and leave them to drain.

clean a cucumber and cut it into slices.

open a ripe avocado, remove core, slice it and immediately sprinkle it with lemon juice (it will not oxidize).

tear the lettuce by hand and place it on a platter. then distribute the avocado slices, the cucumber, the mungo beans, some black olives without pits.

marinade: lemon juice, lime juice, olive oil and grape seeds oil (equal mixture), sea salt, a little grated lime peel, one tablespoon of water. mix well and sprinkle the salad.


the taste is an interesting mix between southern and asian flavors, i let you discover it yourself.

the contrast between the different consistencies is really seductive to the taste buds. as about the colors combination, i assure you it will be found interesting even by those who do not usually eat leaves...
