for a royal salad we need some special leaves, with appetizing and seductive-looking, so i chose a very elegant variety, called "french castle", with spring shades of pink and yellow.
this salad has firmer leaves, the texture is a combination between cabbage and lettuce and has the advantage that it does not soften and maintains its shape.
you can combine it with whatever you want; i chose a chromatic game of lettuce, cherry tomatoes, mozzarella and fresh basil leaves.
sprinkle the salad with a simple dressing of olive oil and lemon juice and serve immediately.
