i propose an exotic recipe of salmon, easy and very quick: salmon cubes with walnuts, roasted in the oven. this recipe is adapted from an israeli recipe (baked salmon with hazelnut), resulting an exotic preparation, curry flavored and roasted hazelnuts fragranced, which goes perfectly with apricot chutney and raisins.
ingredients:
-1 piece of salmon fillet without skin, approx. 300 gr
-ground hazelnuts
-curry-powder
-garlic powder
-salt
-pepper
for chutney: some apricots, basil and fresh green mint, olive oil, vinegar, lemon juice, curry, chilli, salt, brown sugar, pepper.

cut salmon into cubes. sprinkle with salt.

mix 5-6 tablespoons of ground nuts with 1 tablespoon of curry (powder), 1 teaspoon of garlic powder, salt, pepper. stir until the composition is homogeneous.

mix the salmon with the ground hazelnuts and the spices.

place the salmon cubes in a pan, on a baking paper.

put it into the oven for about 10-15 minutes until slightly browned (180 degrees).

check a cube if it's done. meat should be tender and juicy.

for chutney: mix the apricots and make a sauce with all the ingredients above. boil until it has the consistency of jam.
