Spaghetti with brown mushrooms, green asparagus and Ramsons pesto

The vegetarian spaghetti can be a delight if you give free rein to the imagination. This is a classic Italian recipe, but it is definitely a recipe worth trying.
 
Ingredients: 
-Italian spaghetti
-1 box of 500 grams of brown mushrooms
-1 bundle of green asparagus
-1 bundle of Ramsons
-1 handful of sunflower seeds
-some spring onions
-a few cloves of garlic
-sea salt
-black-pepper
-virgin olive oil



Boil the pasta al dente and drain. Rinse with cold water and leave to drain in colander until the sauce is ready.
 
In a pan put 2 tablespoons of oil, and simmer the sliced onions and garlic over low heat.


Add sliced mushrooms for a few minutes.


Add a few stalks of asparagus cut small pieces of 3-5 cm.


Stew for another 3 minutes, until the asparagus is done "al dente" (i.e. slightly crunchy).


Add the pasta and mix. You can add more garlic and sliced fresh Ramsons, if you want it spicier.


Make pesto of Ramsons in the blender: asparagus, Ramsons, onion, sunflower seeds, a little oil, salt, pepper, lemon juice.


Pour 3-4 tablespoons over pasta, mix and turn off the fire.



Serve warm with Ramsons sauce.



Serve the spaghettis in nests and pour pesto over them.


Garnish with fresh basil leaves.
