Vegetable soup seasoned with cream and egg

Vegetable soup is a delicacy not to be missed this spring, when we find a lot of greens in the markets.
It can be prepare quickly, is sour, refreshing and energizing. If you put yoghurt or sour cream and egg it will taste creamy and will get a nice consistency.

It can be prepared with one or more vegetables, according to preference: orach, garden sorrel, spinach, lettuce, Ramsons, watercress, etc...
