Zucchini and carrot tagliatelle and vegetable stracciatella

When summer comes you should take advantage of the abundance of fresh and full of vitamins vegetables, so I invite you to a vegetarian menu. If you fear that you husband will not be delighted by this idea, then you can make this recipe as a garnish for a salmon or a steak and so everyone is pleased.
The presentation of vegetables like zucchini and carrot tagliatelle may attract the interest (and why not the appetite too) picky children or people who declare themselves exclusively carnivorous.
We know that taste is a sense that is cultivated throughout life, so it's never too late to show your loved ones how delicious vegetarian preparations are. Taste education and food awareness, especially among children, will help to avoid or to only occasionally eat fast food products, very good for their health as teenagers or young adults.
Remember: your efforts as parents, the time you spend with your family can be invaluable in the future of your children!

Ingredients:
-a green zucchini squash (or white, Romanian, but that must be peeled)
-a large carrot
-3 green asparagus
-a red pepper
-2 onions
-olive oil
-oregano, salt, pepper
Carrots are washed, cleaned and cut in thin strips (using the cleaning vegetables device). Cook the strips of carrot in 2 tablespoons of olive oil.


Wash zucchini, cut it long, thin strips and add over the carrot., to cook. Sprinkle salt and oregano. When zucchini is slightly brown (after 3-4 minutes), turn off heat.


Finely chop the remaining vegetables. Wash asparagus, break and remove the timber from the top and cut into pieces of 2-3 cm, keeping the tips whole.
Cook chopped vegetables in a little oil. After two minutes, add the asparagus tips. Sprinkle salt and pepper. Stir occasionally. When they are slightly crisp, but not totally made, they are ready. Vegetable stracciatella should contain vegetables slightly browning, but not soft, a little raw.


Add tagliatelle over vegetable stracciatella, stir a little, and serve. You can put a bit of tomato juice, if desired.


You can serve them as a garnish or as a vegetarian preparation (as in picture).
